Corn Noodles with Longaniza, Roasted Spiced Cebollitas and Garlic Jalapeno Tomato Pink Peppercorn Olive Oil

A tasty entree that features hand crafted longaniza sausage!
     Chinese corn noodles have a nice cornbread or corn tortilla flavor that is perfect for modern Mexican food creations.  A package of high quality Chinese corn noodles are divided into portions and each portion is tied with a ribbon.  Many Chinese specialty noodles like Fuzhou or buckwheat noodles are tied with string or ribbons and portioned.   This adds a nice look to a dried noodle product and it makes portioning easier.     Cebollitas are a type of green onion that has a large white bulb.  Cebollitas are often used in Spanish and Mexican cuisine.  Pickled cebollitas are a refreshing tapas.  Roasted cebollitas become sweet, as the sugars in the onion are cooked.  I have posted a few recipes that included roasted whole cebollitas in the past.  Today's recipe features split cebollitas that are roasted with cumin seeds and mustard seeds.  This seed combination is commonly used for the start of many Indian and Pakistani recipes.  The mustard seed and cumin seed adds a nice flavor to the cebollitas.     I stopped by the Las Islena Market in Las Vegas this afternoon to pick up some fresh made lard for some upcoming Mexican recipes.  I have featured this nice little market in a past review article in this blog.  Fresh hand crafted queso fresco and queso cotija were available today at a very nice price!  The cebollitas looked good, so I started thinking of a protein to go with the onions for an entree creation.  I liked the hand crafted La Islena butcher shop's longaniza sausage in the past, so I figured it would be a good choice.  Good hand crafted longaniza sausage is a much higher quality than manufactured bulk longaniza sausage.  The longaniza at Las Islena is one of the best!       A simple olive oil sauce was the best choice for this recipe creation.  Olive oil sauces carry plenty of flavor and they are very healthy.
     Roasted Longaniza Sausage:     Lightly brush a roasting pan with vegetable oil.     Place an 8 ounce piece of fresh longaniza sausage on the pan.     Roast the sausage in a 350 degree oven, till it becomes fully cooked and lightly browned.     Keep the sausage warm on a stove top.
     Roasted Cumin Seed and Mustard Seed Spiced Cebollitas:     The cebollitas can be roasted at the same time as the longaniza.  It is better to roast the cebollitas in a separate pan.  The spice seeds will become crunchy and palatable after roasting.     Trim 3 or 4 cebollitas.     Split the cebollitas in half lengthwise.     Place the cebollitas in a roasting pan with the flat side of the split onions facing up.     Drizzle a little bit of blended olive oil over the cebollitas.     Season with sea salt.     Sprinkle a couple pinches of whole mustard seed over the cebollitas.     Sprinkle a couple pinches of cumin seed over the cebollitas.     Roast the cebollitas in a 350 degree oven, till the onion bulbs become tender and till the green cebollita tops become lightly caramelized.     Keep the spiced roasted cebollitas warm on a stove top.
     Corn Noodles with Garlic Jalapeno Tomato Pink Peppercorn Olive Oil:     The sauce can be made while the noodles cook!     Boil 1 portion of Chinese corn noodles, till they become tender.      Heat a saute pan over medium/medium low heat.     Add 2 tablespoons of olive oil.     Add 2 cloves of thin sliced garlic.     Saute till the garlic starts to turn a golden color.     Add 1 small diced seeded green jalapeno pepper.     Saute for a few seconds, so the pepper starts to cook.     Add 1 diced plum tomato.     Add sea salt.     Add 2 pinches of coriander.     Saute till the tomato becomes tender.     Reduce the temperature to very low heat.     Add 2 to 3 pinches of crushed pink peppercorn.     Add 1 tablespoon of virgin olive oil while stirring.     By now the corn noodles should be tender.     Drain the water off of the corn noodles.     Add the corn noodles to the olive oil sauce and toss the ingredients together.
     Corn Noodles with Longaniza, Spiced Roasted Cebollitas and Garlic Jalapeno Tomato Pink Peppercorn Olive Oil:     Use a long tine carving fork to twist the corn noodles while plating the noodles, so they look nice.     Spoon any excess olive oil sauce over the noodles and on the plate.      Bias cut the roasted longaniza sausage into 4 equal size pieces.     Place the longaniza pieces on top of the noodles.     Place the roasted spiced cebollitas on the plate, so the caramelized green tops of the cebollitas hang over the mound of noodles and longaniza. 
     This is a great tasting afternoon meal!  There is no shortage of great flavors in this modern Mexican style recipe.  Yum!  ...  Shawna
