I'm not Mexican, but I grew up as a kid in a great Mexican restaurant kitchen in California. The restaurant was rated as the best Mexican food in California way back then. It was located in the old historic jail house by Mission San Gabriel. Mexican cuisine was the first cuisine that I learned!
Mexican cuisine is rated as the healthiest food to eat in the world! The main flavor combinations of Mexican cuisine are a mixture of native Mexican and Spanish. There are also influences from immigrants that settled in Mexico. German, Swedish, Lebanese and Chinese influences are part of the history of Mexican cuisine. The Aztec cuisine and northern Mexico native village cuisine are the roots of what most consider to be signature Mexican cuisine. Mayan cuisine plays a major part in southern Mexico. The Mayans created the most popular food of all. Chocolate!
