A different kind of yummy breakfast sandwich on Grecian sesame ring bread!
     Sometimes I see something interesting at a market and I give it a try.  I purchased a few Grecian sesame ring breads at the Mediterranean Market in Las Vegas.  Ring bread is made with a yeast leavened dough.  The texture of ring bread is much softer than a French baguette and the dough is not enriched with milk.  Soft breads are nice for breakfast!     The ring shape of koulóuria bread makes for an interesting breakfast sandwich shape.  At first glance this sandwich looks like a bagel breakfast sandwich.  The texture of koulóuria is much lighter than a heavy dense bagel.  The hole in the ring bread is much wider than a hole of a bagel.     Because of the ring bread's shape, a spatula must be used to place this breakfast sandwich on a plate.  The ingredients will fall out of the sandwich if the ring bread is tilted.  Once on the plate, the ring bread breakfast sandwich can be cut into manageable size pieces with a knife or portions of the sandwich can be torn by hand.  By necessity, this is a different approach to eating a breakfast sandwich.     The combination of ingredients on this sandwich are nice tasting!  Because this is a Grecian style bread, I went ahead and used smoked bacon on the sandwich along with the Lebanese village cheese.  As most of my readers know, pork products are taboo in the middle east.  Lebanese Galilee Village cheese is very much like a rustic fresh mozzarella cheese.  Lebanese village cheese was one of the very first cheeses in history.  That is nice for this recipe because the ancient Greeks were among the first to perfect yeast leavened breads.
     Pepper, Smoked Bacon, Village Cheese and Eggs on Koulóuria Bread Recipe:     Cut a Grecian sesame ring bread in half by only cutting the bread on one side and by turning the bread  to meet the blade.       Heat a griddle or saute pan over medium/medium low heat.     Brush the bread with melted unsalted butter.     Grill the ring bread on the hot pan, till it becomes toasted.     Keep the toasted ring bread warm on a stove top.     Heat a non-stick saute pan over medium/medium low heat.     Add 1 1/2 strips of smoked bacon that is coarsely chopped.     Saute till the bacon almost becomes crisp.     Add 1 small handful of of small green bell pepper strips.     Saute the peppers in the smoked bacon grease, till they start to become tender.     Add 2 whisked eggs.     Add 1 small handful of coarsely chopped Lebanese village cheese.     Add 1 pinch of sea salt and black pepper.     Use a rubber spatula to scramble the eggs and the sauteed ingredients together.  (Because the Lebanese village cheese is a fresh cheese, it will only soften and it will not melt!)     Scramble the egg mixture, till the eggs are fully cooked.     Remove the pan from the heat.     Place the bottom half of the ring bread on a cutting board.     Use a spoon to place the cooked egg mixture on the ring bread.     Place top half of the ring bread on the sandwich.     Use a large spatula to place the Pepper, Smoked Bacon, Village Cheese and Eggs on Koulóuria Bread sandwich on a plate.     Garnish with cilantro sprigs.          This is a neat sandwich to eat for breakfast!  I found myself sipping coffee, doing some writing on my computer and tearing off pieces of this ring bread breakfast sandwich to eat while busy.  This is a finger food style sandwich, if you are dining casually in the morning.  That is one of life's simple pleasures!  This Pepper, Smoked Bacon, Village Cheese and Eggs on Koulóuria Bread breakfast sandwich tasted good too.  Yum!  ...  Shawna
