Mexican longaniza sausage tacos with a refreshing cabbage salad sweetened with honey!
Longaniza is a popular sausage in Spain, Portugal, Puerto Rico, The Philippines, Mexico and the Americas. Longaniza is similar to chorizo sausage. Like chorizo, there are many different regional styles of longaniza. Some styles are spicy like chorizo and other styles are very mild. Some Mexican longaniza are made only with beef and some are blended with pork. In central America and the Yucatan, longaniza is commonly seasoned with achiote (annatto) and the flavor is very mild. The Yucatan style longaniza is what I chose for this taco recipe.
I ran across a good Mexican butcher shop and grocer a few days ago. The La Islena Market is located at 2405 North Rainbow Boulevard at the intersection of Smoke Ranch. La Islena Market can only be accessed by driving southbound on Rainbow, before getting to Smoke Ranch. Even thouaccess is difficult, it is worth checking this small market out! La Isleana Market is a small shop that is packed full of good Latino food.
Every cut of beef, pork and chicken that is popular in Mexico was available! Several kinds of Mexican sausages that were freshly made at the butcher shop were offered for sale. The meats and sausages really looked like top notch quality, so I purchased a longaniza sausage. I asked the butcher if the sausage was spicy and he replied that this longaniza was very mild and much milder than chorizo. That sounded nice!
I have posted many authentic styles of Mexican taco recipes in this blog. I could not resist posting another taco recipe with a portion of the longaniza sausage! Chorizo, longaniza and moronga sausage tacos are commonly seen on the menu boards of taco stands in Las Vegas. Mexican street vendor style taco stands are popular places to grab a bite to eat in Las Vegas. If fact, international street vendor food is more than just a trend in Las Vegas. It is a way of life!
I posted a recipe for curtido the repollo a few days ago. There are many variations of the Salvadoran recipe. This ensalada de repollo is sweetened with honey instead of sugar. That makes for a healthier refreshing cabbage salad!
This taco recipe is as easy as it gets. Longaniza sausage is the one and only featured ingredient!
Ensalada de Repollo Recipe:
Place 1 large handful of very thin sliced savoy cabbage into a mixing bowl.
Add a few thin carrot strips for color.
Add 1/2 tablespoon of minced onion.
Add 8 to 10 chopped cilantro leaves.
Add sea salt and white pepper.
Add 1 pinch of ground chile pequin.
Add 1 small squeeze of lime juice.
Add 1/2 tablespoon of cider vinegar.
Add 1/2 tablespoon of honey.
Toss the ingredients together.
Set the salad aside for 5 minutes, so the flavors meld.
Taco Topping:
Place a few very thin slices of onion into a small bowl.
Add 6 thin chiffonade cut cilantro leaves.
Add sea salt and black pepper.
Allow the salt to sweat the onions for 5 minutes.
Tacos de Longaniza:
Place a 5 to 6 ounce piece of fresh longaniza sausage in a sauce pot.
Cover the sausage with water.
Place the pot over medium low heat.
Gently simmer the sausage, till it is fully cooked.
Remove the sausage from the water.
Heat a saute pan over medium/medium low heat.
Add 1 small splash of vegetable oil.
Add the poached longaniza sausage.
Saute till the sausage is lightly browned.
Tacos de Longaniza con ensalada de repollo:
Heat a saute pan over medium/medium low heat.
Add 1 small splash of vegetable oil.
Lightly fry 3 very small corn tortillas on both sides, but do not brown or fry the tacos till they are crisp. Just heat the tortillas in the small amount of oil.
Place the warm tortillas on a plate.
Cut the browned longaniza sausage into thin slices. The sausage may grumble slightly and that is normal.
Place equal amounts of the sausage on each tortilla.
Place an equal amount of the sweated onion and cilantro topping on each taco.
Place a mound of the ensalada de repollo on the plate.
Garnish with cilantro sprigs and lime slices.
Because this was a hand crafted nice quality longaniza sausage, it was featured on its own! A mass produced commercial longaniza sausage would not be worth featuring. For a very simple taco, it has a great classic Mexican sausage flavor! Yum! ... Shawna
